Steak and Vegetable Skewers
Cozy dishes are nice, but I’m a summer gal, so I love the warm evenings where you can throw everything on the grill! It just feels fresher & lighter to me.
So obvi these skewers were a must make as we enter the month of June. The best part is the simplicity of it all. You really can use whatever protein and veggies you prefer, stack them up, and throw them on the grill.
Here’s how you make it.
Ingredients:
1lb sirloin steak
1-2 small zucchinis
8 oz mushrooms
1 red onion
1-2 bell peppers
3 tablespoons avocado oil
Seasonings of choice (I used garlic & thyme)
Salt and pepper
Instructions:
If using wooden skewers soak for 20-30 minutes. Cut all vegetables into small pieces and toss with avocado, seasonings, salt, and pepper. Season the steak with salt and pepper and cut into cubes. Assemble everything on the skewers.
Heat the grill and cook for about 6 minutes on each side or until the steak is about 145 degrees. Top with a sauce (my Poblano Crema recipe is in the Cauli Nacho post) and enjoy!
