Jicama Fish Tacos

Lately I’ve been craving tacos a lot and I wanted to switch it up a little bit - enter fish tacos. With summer basically here I’m really looking to lighten my carb load so I feel my best when wearing swimsuits. Jicama tortillas are the answer to my prayers! They don’t have an overpowering flavor at all, they’re sturdy, and they just make your taco feel fresh af. They’re also basically 1 carb!!

If you’ve never cooked fish before and the idea scares you - don’t! Fish cooks in minutes making it super easy. Just make sure it’s fresh!

Here’s how you make it.

Ingredients:

  • Jicama tortillas

  • 1 lb halibut

  • 2 tablespoons olive oil

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon cayenne

  • 1 lemon juiced

  • 1 lime juiced

  • 2-3 cups cabbage slaw

  • 1/4 cup mayo

  • 1/2 jalapeño diced

  • Salt and pepper

  • Hot sauce

Instructions:

  • Cut the halibut into small filets - about 1 1/2 inches and place in a large bowl. Season with the olive oil, lemon, garlic powder, paprika, cayenne, salt, and pepper. Let sit for 15 minutes.

  • In a medium bowl mix the mayo, lime juice, jalapeño, and as much hot sauce as you like. Toss in the cabbage and let sit so it softens.

  • Heat a medium pan on medium high heat and sear the fish for 2-3 minutes each side. Assemble the jicama tortillas with the slaw, avocado, and fish. Enjoy!
