Chicken Zucchini Burgers
Burgers are one of my favorite foods, hands down. Toast a bun, melt some cheese, and add mayo + ketchup and I’m sold! I love finding ways to make my burger obsession a little healthier so adding veggies to the patty seemed to be the perfect addition.
These patties are so good and feel a little lighter than your classic burger. I imagine if I had kids these would be a staple bc you can really sneak in the veggies! I think carrots or spinach would be an awesome addition.
Here’s how you make it.
Ingredients:
1 lb ground chicken
2 small zucchini
1/2 onion diced
3 stalks celery diced
2 cloves garlic minced
2-3 tablespoons avocado oil

Salt & pepper
Burger toppings of choice
Instructions:
Grate the zucchini over a paper towel or cheese cloth and squeeze out as much water as you can. Salt it and let it sit for a few minutes then squeeze again.
Heat 1 tablespoon avocado oil on medium heat and sauté the onion for 5-10 minutes. Then add the celery and cook another 3 minutes. Add the garlic and sauté until fragrant. Remove from the heat.
In a large bowl mix the chicken, zucchini, and onion mixture (when cook enough to handle) and season with salt and pepper. Form into patties - about 4-5.
Heat the remaining oil on medium and cook the patties for 6 minutes each side. Cook in batches if needed. Assemble burgers with toppings and enjoy!
