Miso Tahini Slaw Salad
This week I’m cooking for one so I wanted to reuse as many ingredients as possible to save money + time. On Monday I cooked two cubed chicken breast with tamari and sriracha. I got a bag of cabbage slaw + broccoli slaw to keep the chopping down. Threw it all together with a dressing I made using ingredients I already had and made a fresh af salad!
Honestly during the day I wasn’t looking forward to this meal but it turned out amazing. I love a fresh salad in the summer and the crunch factor was 👌🏼.
Here’s how you make it.
Ingredients:
1 cup cabbage slaw
1/2 cup broccoli slaw
2 radishes sliced thin
1/2 red bell pepper diced
1/4 cup cooked chicken OR chickpeas
1 avocado
1/2 lemon juice
1 tablespoon miso paste
2 tablespoons tahini
1 clove garlic minced
1 teaspoon minced garlic
1 teaspoon tamari
1 teaspoon rice wine vinegar
Water
Instructions:
Place both slaws in a large bowl add the lemon juice and mix. Add the avocado, radish, chicken, and bell pepper and let sit.
Mix the garlic, ginger, rice wine vinegar, tahini, miso paste, and tamari in a bowl. Add water thin it out. Pour over the salad and top with sesame seeds. Enjoy!
