Miso Tahini Slaw Salad

This week I’m cooking for one so I wanted to reuse as many ingredients as possible to save money + time. On Monday I cooked two cubed chicken breast with tamari and sriracha. I got a bag of cabbage slaw + broccoli slaw to keep the chopping down. Threw it all together with a dressing I made using ingredients I already had and made a fresh af salad!

Honestly during the day I wasn’t looking forward to this meal but it turned out amazing. I love a fresh salad in the summer and the crunch factor was 👌🏼.

Here’s how you make it.

Ingredients:

  • 1 cup cabbage slaw

  • 1/2 cup broccoli slaw

  • 2 radishes sliced thin

  • 1/2 red bell pepper diced

  • 1/4 cup cooked chicken OR chickpeas

  • 1 avocado

  • 1/2 lemon juice

  • 1 tablespoon miso paste

  • 2 tablespoons tahini

  • 1 clove garlic minced

  • 1 teaspoon minced garlic

  • 1 teaspoon tamari

  • 1 teaspoon rice wine vinegar

  • Water

Instructions:

  • Place both slaws in a large bowl add the lemon juice and mix. Add the avocado, radish, chicken, and bell pepper and let sit.

  • Mix the garlic, ginger, rice wine vinegar, tahini, miso paste, and tamari in a bowl. Add water thin it out. Pour over the salad and top with sesame seeds. Enjoy!
