Easy Cauliflower Fried Rice

I often hear people say they don’t have time to cook or just don’t want to after a long day of work. To that I say no excuses!

Make your life easier and buy some precut and/or frozen veggies. Throw them in a pan and you’ve got yourself a stir fry. It really can be as simple as that!

The only cutting I did for this meal was 1/2 onion and some garlic. I’ve been using the same protein in different meals all week and it’s given me so much time back. You could make it even easier with a rotisserie chicken!

Eating healthy may require some extra planning and a little prep but it doesn’t need to take over your life. Keeping simple meals like this in your back pocket will truly save your ass.

Here’s how you make it.

Ingredients:

  • 2 cups cauliflower rice

  • 1/2 onion diced

  • 1/4 cup frozen peas

  • 3 cloves garlic minced

  • 1 large handful broccoli slaw

  • 1/2 cup precooked chicken

  • 2 eggs beaten

  • 1 tablespoon olive oil

  • Salt and pepper

  • Tamari

Instructions:

  • In a large pan heat the olive oil over medium. Add the onion, peas, slaw, garlic, and cauliflower rice. Cook for about 5-8 mins or until the veggies start to crisp.

  • Push everything to the side and add the eggs. Season with salt and pepper and scramble. Add the chicken in to heat and drizzle with tamari. Enjoy!
