Hearts Of Palm Pasta Pomodoro
I used to be a loyal spaghetti squash gal, but I have to say the ease of making this hearts of palm pasta cannot be slept on!
It’s packed with so much fiber, the carb count comes down to 8 net grams for the entire box 🤯. It also looks and tastes a lot like real pasta and I have to say it held my sauce pretty well. Run, don’t walk, to get your hands on it!
Here’s how you make it.
Ingredients:
2 packs of hearts of palm pasta
1 cup cherry tomatoes sliced
1/4 cup olive oil
3 cloves garlic minced
1 shallot minced
1 lemon juiced
Salt and pepper
Red pepper flakes
Basil
Instructions:
Rinse the hearts of palm and set aside. Heat the olive oil on medium and stir in the shallot and garlic. Add the tomatoes and let cook down until the tomatoes burst and you have a jammy texture. Lower the heat to avoid garlic burning if needed.
Once you are happy with the tomatoes (about 10-15 minutes) add in the pasta, lemon juice, seasonings, and basil. Sauté for about 5 minutes and enjoy!
P.s. this tastes amazing cold the next day with some arugula!
