Quick Bolognese With Zoodles

I always say dinner should be simple, and sometimes that means just adding a protein and a few extra veggies to some pre made sauce and calling it a day.

That’s exactly what’s going on here. You can honestly add whatever you want but I used a mirepoix mix to give it a bolognese feel then added some kale and olives for extra flavor. I went with zoodles as my noodles and I honestly think they have a bad rap. They’re pretty good IMO! Buy them precut to save even more time. There’s no shame in a short cut!

Here’s how you make it.

Ingredients:

  • 1 jar @raoshomemade

  • 1 lb grass fed ground beef

  • 1 mirepoix mix

  • 2 cups shredded kale

  • 1/2 cup chopped olives

  • 3 cloves garlic minced

  • 1 pack zoodles

  • 2 tablespoons olive oil

  • 2 tablespoons Italian seasoning

  • Splash of almond milk

  • Salt and pepper

Instructions:

  • Heat 1 tablespoon oil in a pan on medium and brown the ground beef. Break it up with your spoon. When it’s slightly pink add the mirepoix and garlic. Cook until the vegetables are soft and add the sauce, kale, olives, milk, and seasoning. Bring to a simmer and let it thicken.

  • Meanwhile, heat the remaining oil in another pan and cook the zoodles until they are your desired consistency. Season with salt and pepper. Portion on a plate and pour the sauce over. Enjoy!
