Butternut Squash Pizza
This is basically Fall on a cauliflower crust. I recently was out to dinner and the table ordered a butternut squash pizza that I knew I had to recreate. Butternut squash with melted cheese & red pepper flakes is the combo I never knew I needed.
I used raclette cheese for this which is nice and melty Swiss cheese, similar to Brie, but holds its shape like a halloumi. I got this sliced package from @traderjoes and I’m telling you to run and get your hands on some before it’s gone!
Here’s how you make it.
Ingredients:
Cauliflower pizza crust of choice
Butternut squash cut into small pieces (I used pre cut from Trader Joe’s)
4 pieces cooked bacon chopped
1 shallot sliced
1 tablespoon butter or oil
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon cayenne
Arugula
Raclette cheese (or whatever you prefer)
Salt and pepper
Red pepper flakes
Instructions:
Heat the oven to 400. Toss the butternut squash with 1 tbsp oil, cayenne, garlic powder, salt, and pepper. Roast for 15-20 minutes.
In a small pan on the stove, melt the butter and cook the shallots until caramelized and slightly crispy. Set aside.
Cook the crust according to the package. Assemble the pizza with most of the butternut squash then cheese. Layer a few extra pieces of butternut squash on top. Broil on high for 4 minutes or until the cheese is bubbling. Top with the shallot, bacon, arugula, remaining oil, and red pepper flakes. Enjoy!
