Butternut Squash Pizza

This is basically Fall on a cauliflower crust. I recently was out to dinner and the table ordered a butternut squash pizza that I knew I had to recreate. Butternut squash with melted cheese & red pepper flakes is the combo I never knew I needed.

I used raclette cheese for this which is nice and melty Swiss cheese, similar to Brie, but holds its shape like a halloumi. I got this sliced package from @traderjoes and I’m telling you to run and get your hands on some before it’s gone!

Here’s how you make it.

Ingredients:

  • Cauliflower pizza crust of choice

  • Butternut squash cut into small pieces (I used pre cut from Trader Joe’s)

  • 4 pieces cooked bacon chopped

  • 1 shallot sliced

  • 1 tablespoon butter or oil

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon cayenne

  • Arugula

  • Raclette cheese (or whatever you prefer)

  • Salt and pepper

  • Red pepper flakes


Instructions:

  • Heat the oven to 400. Toss the butternut squash with 1 tbsp oil, cayenne, garlic powder, salt, and pepper. Roast for 15-20 minutes.

  • In a small pan on the stove, melt the butter and cook the shallots until caramelized and slightly crispy. Set aside.

  • Cook the crust according to the package. Assemble the pizza with most of the butternut squash then cheese. Layer a few extra pieces of butternut squash on top. Broil on high for 4 minutes or until the cheese is bubbling. Top with the shallot, bacon, arugula, remaining oil, and red pepper flakes. Enjoy!
