Beet & Goat Cheese Stacks
This is your reminder to try new foods. Even if you think you won’t like it. Even if you’ve already tried it before.
There are very few foods I don’t like, and even still I’m willing to try them again prepared differently because I like to have options! The more food you are willing to eat the more variety you will have. Then you will never be bored, or walk into a restaurant or party where there’s nothing for you to eat.
Beets used to be one of the few foods I didn’t like, but I realized I never really gave them a chance. They are SO good for you- especially your lungs and for detoxing - so I gave them a second chance. And what do you know - I love them! Especially with goat cheese all over.
Here’s how you make this stunning stack.
Ingredients:
Beets
Herby goat cheese
Olive oil
Salt & pepper
Instructions:
Cover the beets in olive oil , salt, and pepper and wrap in foil. Roast for 50 minutes or until soft and peel. Slice into thin circles.
Heat some oil on low heat and lightly grill the goat cheese, being careful to not let it melt. Layer the beets with goat cheese in between and serve over arugula. Enjoy!
