Quinoa Bibimbap

This meal is based off a recipe I found from “The Beauty Chef”, which is full of amazing meals to help heal your gut, and promote radiant skin. This recipe is awesome because the vegetables are really interchangeable. I love using quinoa instead of rice because it’s super high in protein, and naturally gluten free. It also helps lower your blood sugar. The addition of kimchi is great for your gut because it is rich in probiotics from being fermented. To make this vegetarian you can simply omit the ground beef, but I personally wouldn’t skip it!

Here’s how you make it:

Ingredients:

  • 1-1 1/2 cups cooked quinoa

  • 1 lb grass fed beef

  • 1 tablespoon coconut oil

  • 1 tablespoon coconut aminos + more for serving

  • 2 cloves of minced garlic

  • 3 tablespoons sesame oil

  • 1 teaspoon maple syrup

  • 2-3 handfuls of spinach

  • 8 oz of mushrooms sliced

  • 2 cups broccoli slaw + shredded carrots

  • 2 eggs

  • Kimchi

  • Sriracha

  • Sesame seeds

Instructions:

  • Marinate your beef with the coconut oil, 1 tablespoon coconut aminos, 1 tablespoon sesame oil, garlic, & maple syrup. Mix in and let sit for 15 minutes. Cook over medium eat and cover. 

  • Cook your veggies individually with 1/4 cup water over medium heat for 3-4 minutes. Once tender drizzle the sesame oil & salt and set aside. Add sesame seeds to the spinach. Once the veggies are done fry your eggs. 

  • Top the cooked quinoa with the beef, veggies, kimchi, & egg. Add sesame seeds, sriracha, & coconut aminos. Enjoy!
