I absolutely love Mediterranean food because it just feels FRESH. It also helps that there is tons of research proving that it is one of the healthiest diets to model your life after!

This chicken shawarma recipe is super flavorful and so easy to make in the oven. You can eat the chicken with pita, over rice/cauliflower rice, or in a salad. I am choosing to use grain free tortillas for mine to keep it somewhere in between healthy and indulging.

I like to top my chicken with a simple Greek salad, hummus, and yogurt sauce. Other toppings that would taste amazing include pickles, feta, roasted eggplant, or tahini - you really can do no wrong here.

Ingredients for chicken:

  • 2 pounds boneless skinless chicken thighs

  • 2 lemons

  • 4 cloves minced garlic

  • 1 teaspoon salt

  • 2 teaspoons pepper

  • 2 teaspoons cumin

  • 2 teaspoons paprika

  • 1/2 teaspoon turmeric

  • 1/4 cup avocado oil

  • Pinch of cinnamon

  • 1 large onion

  • Trader Joe’s onion chili crunch or red pepper flakes to taste

  • Parsley

Ingredients for yogurt sauce:

  • 1 cup greek yogurt

  • 1 juice + zest of lemon

  • 1/2 chopped and grated cucumber

  • Chopped dill - to your liking

  • Chopped parsley - to your liking

  • Chopped basil - to your liking

  • Salt & pepper to tase

Ingredients for Greek salad:

  • 1 roma tomato

  • 1 cucumber

  • 1/2 cup Kalamata olives

  • 3 tablespoons olive oil

  • 1 tablespoon red wine vinegar

  • 1 teaspoon garlic powder

  • 1 tablespoon dried oregano

  • Salt & pepper to taste

Instructions:

  • Prepare the marinade by mixing all seasonings, oil, & lemon juice into a bowl, then mix in the chicken. Let sit in fridge for at least 1 hour.

  • Meanwhile make your yogurt sauce by mixing together all ingredients. Adjust to your taste by adding more or less lemon and cucumber.

  • Create your salad by dicing the tomato, cucumber, and olives. Mix in the olive oil, red wine vinegar, and seasonings.

  • Preheat the oven to 425. Slice up the onion and mix in with the chicken. Place everything on a baking sheet and top with sliced lemons if desired. Place in oven for 30-40 minutes. Let cool and slice up.

  • Assemble your tacos with hummus, chicken shawarma, Greek salad, and top off with the yogurt sauce. Enjoy!
