Low Carb Broccoli Cheddar Casserole

If you grew up eating Rice-A-Roni then this recipe is for you! It’s truly identical in flavor, but way healthier. This is the perfect meal prep dinner or an awesome way to get your kiddos to eat veggies.

I used dairy free cheddar & cream cheese however regular would be good too. I try to avoid dairy when possible (especially at home) to avoid bloat, but vegan cheese isn’t for everyone.

You don’t need to add onion, but in my world onions make everything better. If you really wanted to cut down on cooking time, using rotisserie chicken would be a great option!

Here’s how you make it.

Ingredients:

  • 1 lb chicken breast cubed

  • 2 tbsp olive oil

  • 12 oz frozen cauliflower rice

  • 3 cups broccoli florets chopped into small pieces

  • 1/2 onion diced

  • 1 tablespoon onion powder

  • 1 tablespoon garlic powder

  • 4 oz cashew cream cheese

  • 1 1/2 cups dairy free cheddar

  • 2 eggs

  • Salt and pepper


Instructions:

  • Heat the oven to 350. In a pan on medium heat 1 tbsp oil and sauté the onions until translucent. Set aside. Use the remaining oil and cook the chicken for about 6 minutes. Season with salt and pepper.

  • Microwave the cauli rice. In a large bowl combine the rice, broccoli, cream cheese, garlic + onion powder, and 2 eggs. Add the chicken, 1 cup cheese, salt, and pepper and mix. Place in an 8x8 baking dish and top with remaining cheese.

  • Bake for 30-40 minutes or until cheese is melted on top. Enjoy!
