Keto Spicy Crab Hand Rolls
I could eat sushi for every meal, so learning how to make it at home and low carb was a must. I wasn’t 100% sure about the cauliflower sushi rice at first, but it actually turned out amazing. I could probably eat like 8 of these!
When dealing with the cauliflower, it’s very important to blend the pieces down so they’re nice and small. Otherwise the consistency will be off, and it will really overstuff the rolls. You probably don’t need to use a rolling mat, but it does make it so much easier and fun! I used this one from Amazon.
Here’s how you make it.
Ingredients:
3 cups cauliflower rice
2 tablespoons rice vinegar
2 teaspoons tapioca flour
1 teaspoon olive oil
2 sheets nori
8 oz crab meat
1/4 cup @primalkitchenfoods mayo
1/2 avocado sliced
1/4 cucumber sliced thin
Sriracha
Sesame seeds
Coconut aminos
Instructions:Pulse the cauliflower rice in a blender or food processor until it’s small pieces. Heat the olive oil in a pan on medium and cook the cauliflower rice for about 3 minutes. Add the rice vinegar + a pinch of salt and stir making sure the rice is coated and cook another 2 minutes. Next add the tapioca four and stir until combine. Remove from heat and let slightly cool. Squeeze out as much water as possible on a plate with a paper towel.
In another bowl mix the crab meat, mayo, and sriracha. Lightly toast the nori sheets, and begin assembling. Add a thin layer of rice + sesame seeds all over, then the meat, avocado, and cucumber 1/3 of the way from the edge. Use a bamboo sheet to roll, slice down the center, and serve with coconut aminos.
