Harvest Bowl with Sage Vinaigrette

I really didn’t want to call this “Harvest Bowl” or “Fall Salad” but what can I say, sometimes I’m basic! 🤷🏼‍♀️

This seasonal salad is perfect for the start of Fall! Massaged kale, roasted veggies, sausage, and a simple sage vinaigrette - what else do you need?! Actually, a touch of goat cheese would make a great addition!

This is a great healthy warm salad for those cold nights ahead (unless you live in LA).

Here’s how you make it.

Ingredients:

  • 2-3 cups kale massaged

  • 1/2 bag Brussels sprouts chopped

  • 1 medium sweet potato chopped

  • 1 red onion sliced

  • 1 tablespoon garlic powder

  • 1 teaspoon cayenne

  • 2 tablespoons + 1/2 cup olive oil

  • 1 tablespoon fresh sage minced

  • 2 cloves garlic minced

  • 1 tablespoon Dijon mustard

  • 3 tablespoons balsamic

  • Sausage of choice

  • Salt and pepper


Instructions:

  • Heat the oven to 400. Mix the Brussels, sweet potato, and onion with 2 tbsp olive oil, garlic powder, cayenne, salt, and pepper. Roast for 30-40 minutes.

  • Cook the sausage according to package. Mix the remaining oil, sage, garlic, Dijon, and balsamic together. Assemble the bowls with the kale, roasted veggies, and sausage. Top with the dressing and enjoy!
