One Sheet Veggies & Sausage

This is the perfect lazy meal - simple cut your veggies, season , & roast. For this one I used Brussels sprouts, zucchini, red bell pepper, onions & potato. The sausages were Buffalo Chicken from Trader Joe’s. It was so good, so filling, and so EASY. I love any meal where the veggies are the star and the protein is a side. What’s great about making this is that you can use whatever veggies you like/have on hand and season with your favorite flavors. The sausage is interchangeable too!

Here’s how you make it.

Ingredients:

  • Sausage - I used 5 for 2 of us

  • 8 oz Brussels sprouts chopped

  • 1 large zucchini chopped

  • 1 red bell pepper sliced

  • 1/2 onion sliced

  • 2 red potatoes diced

  • 2-3 tablespoons avocado oil

  • 1 tablespoon nutritional yeast

  • 2 teaspoons dried oregano

  • 2 teaspoons Tony’s seasoning

  • 2 teaspoons dried garlic

  • 1 teaspoon cayenne

  • Salt & pepper to taste

  • 1 tablespoon Chili onion crunch

Instructions:

  • Preheat the oven to 400 and chop all vegetables. Toss with the oil & seasonings on a baking sheet and add the sausage.

  • Place in oven for 15 minutes, rotate the pan, and continue roasting for 15 more minutes. If your sausages aren’t golden brown turn on the broiler for 2-3 minutes. Enjoy!

Optional:

  • Mix mayo, buffalo sauce, and a dash of honey to make a sauce.
