Mediterranean Cauliflower Crust Pizza
The Mediterranean flavor combo on this pizza is seriously something else, and the crust is so good you won’t notice you’re eating cauliflower! I used nutritional yeast in it, making it dairy free, but I added goat cheese on top - it’s called balance! You can dress your pizza with whatever toppings you’d like and it’ll still taste amazing with this killer base. I love making my own crust because I know exactly what is in it & can keep grain free (aka guilt free).

Here’s how you make it:
Ingredients:
Cauliflower Rice (I used the whole bag of fresh rice from TJs)
1/4 cup almond meal
1/4 cup nutritional yeast or parmesan
1 egg
1 tablespoon olive oil
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 cup pizza sauce - I used tomato sauce, garlic, dried oregano, & salt
Roasted red pepper sliced
Kalamata olives sliced
Artichoke hearts sliced
Pancetta - optional
Goat cheese
Arugula
Salt & pepper to taste
Instructions:
Preheat your oven to 430 and let your baking sheet heat in it for 10 minutes.
Microwave your cauliflower rice for about 2.5 minutes and let cool. Use a towel to squeeze out the extra liquid. Combine the crust ingredients and shape on your baking sheet. Make sure to oil it or use parchment paper.
Bake the crust for 20-25 minutes (for extra crisp). Take out of the oven, add your sauce and toppings, and bake for another 10 minutes (cheese should start to brown). If using arugula add now and top with some olive oil & enjoy!
