Low Carb Green Bean Fries With Aioli

This side was created out of my love for The Habit’s Tempura Green Beans and any low carb burger side. Don’t get me wrong - I love fries, but sometimes I want something that is healthy and still satisfying. Hence these low carb green bean fries.

The cassava flour perfectly binds to the green beans and gives it that breaded texture of tempura without the guilt. I added a combo of nutritional yeast and parmesan for extra flavor, but you can easily use one or the other depending on your preference.

These green beans were soooo easy to make, and honestly my husband and I both did not miss the fries.

Ingredients:

Green Beans

  • 1 lb Green beans (cleaned and trimmed)

  • 1 tablespoon avocado oil

  • 1 tablespoon cassava flour

  • 1 tablespoon nutritional yeast

  • 1/2 tablespoon finely grated parmesan

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 1/2 teaspoon Tony’s seasoning salt

  • 1 shake of cayenne pepper

Lemon & Thyme Aioli

  • Mayonnaise (amount up to you)

  • Juice from 1/2 lemon

  • Thyme leaves (2-3 sprigs)

Instructions:

  • Preset your oven to 400 degrees. While the oven heats, coat your green beans in the avocado oil and seasonings (salt, pepper, etc.).

  • Next add the cassava flour, nutritional yeast, and parmesan. Make sure the green beans are evenly coated.

  • Layer on a foil lined baking sheet and make sure that they are evenly spaced. Place in the oven for 20 minutes. You can flip half way through or rotate the baking sheet to ensure they are all evenly cooked.

  • Meanwhile create your sauce. Combine all ingredients and stir.

  • Once your green beans are golden brown and crispy take them out of the oven, and enjoy!
