Keto Shepard’s Pie

Shepard’s Pie is such a comforting meal, so this cleaned up version is perfect for when you need something warm and filling but want to stay on track.

The first time I ever made this, I made the cauliflower mash from scratch and while it was delicious, it was SO TIME CONSUMING! So for this version I decided to use the frozen cauli mash from Trader Joe’s and it worked out perfectly. The key to this is to really season the mash bc otherwise it’s pretty bland. This trick will save you SO MUCH TIME and clean up too.

Here’s how you make it.

Ingredients:

  • Frozen cauliflower mash (I used trade Joe’s)

  • 1 lb ground beef (grass fed preferred)

  • 1 mirepoix mix (carrot, celery, & onion diced)

  • 4 gloves garlic minced

  • 4 tablespoons tomato paste

  • 2 teaspoons dried thyme

  • 1 teaspoon garlic powder

  • 1 cup broth (beef preferred)

  • 1 tablespoon olive oil

  • 1 cup cheddar cheese (optional)

  • Parsley to top

  • Salt & pepper to taste

Instructions:

  • Heat the olive oil in a pan on medium heat and begin to brown your beef. Make sure to break it up, then drain the fat. Add in the mirepoix mix, 1 teaspoon thyme, salt & pepper and cook for 4-5 minutes until soft. Add in the garlic then cook another minute and add the tomato paste and broth. Mix together and let simmer for 15 minutes.

  • Preheat your oven to 350. Meanwhile make your cauliflower mash by following the instructions on the package. I sautéed fresh garlic first but that is optional. Season with garlic powder, the remaining thyme, and salt & pepper.

  • In a baking dish, layer the meat mixture then the cauliflower mash. If using the cheese add it next. Bake for 25 minutes in the oven then top with parsley. Enjoy!
