Keto Chicken Sushi Rolls

The title of this dish may not sound appealing, but trust me when I say you are going to want multiple of these rolls. These are great because they are so light and delicious, and even the left overs are great.

The Keto Chicken Sushi Roll is inspired by one of my favorite local restaurants, Yuko Kitchen. It’s a little Japanese cafe with the BEST teriyaki chicken I’ve ever had. They have tons of different ways they serve it, but if you couldn’t guess my favorite is as a sushi burrito. They are huge burritos with chicken, lettuce, cucumber, avocado, and rice wrapped in nori and served with a perfectly large side of spicy mayo. It’s such a delightful treat!

I could honestly eat these every day, but I do like to avoid carbs when possible for weight management and stomach issues so naturally I had to make my own. The cauliflower sushi rice is the same recipe from my crab hand rolls. The consistency and flavor is so similar to rice that I SWEAR you won’t know the difference. At least try it once before you write it off! I will definitely continue to make up other dishes using this rice because it’s that good.

Here’s how you make it.

Ingredients:

  • 3 cups cauliflower rice

  • 2 tablespoons rice vinegar

  • 2 teaspoons tapioca flour

  • 1 teaspoon olive oil

  • 2 sheets nori

  • 1/2 lb chicken cubed

  • 3 tablespoons tamari

  • 1/2 teaspoon sesame oil

  • 1/2 teaspoon garlic powder

  • Pinch of salt + pepper

  • Handful of greens of choice

  • 1/2 avocado

  • 1/3 cucumber sliced thin

  • Spicy Mayo

  • Sesame seeds

Instructions:

  • Pulse the cauliflower rice in a blender or food processor until it’s small pieces. Heat the olive oil in a pan on medium and cook the cauliflower rice for about 3 minutes. Add the rice vinegar + a pinch of salt and stir making sure the rice is coated and cook another 2 minutes. Next add the tapioca four and stir until combine. Remove from heat and let slightly cool. Squeeze out as much water as possible on a plate with a paper towel.

  • Mix the chicken with the tamari, garlic powder, sesame oil, pinch of salt and pepper. Use the same pan you used for the cauliflower rice on medium heat and add a little olive oil if needed. Cook the chicken for about 5 mins, stirring every few minutes.

  • Lightly toast the nori sheets and start assembling. Add the cauli rice, sesame seeds on majority of the sheet. Then add the remaining ingredients 1/3 from the edge. Roll up and enjoy with more tamari and spicy Mayo!
