Harissa Chicken Meatballs

These juicy meatballs just affirmed my love for Mediterranean food. The harissa gives them a nice spice that is balanced by the addition of dill. I loved mixing it all together with a high quality hummus, feta, and of course more harissa (I like it ๐ŸŒถ๐ŸŒถ๐ŸŒถ).

I served this dish with a cauliflower rice pilaf from @wholefoods + a cucumber salad that I consider Greek bruschetta. You could easily use couscous, or stuff in a fluffy pita!

Hereโ€™s how you make it.

Ingredients:

  • 1 lb ground chicken

  • 1/4 harissa

  • 1/4 almond flour

  • 1 egg

  • 1/4 onion diced

  • 3 cloves garlic minced

  • 1 tablespoon dill chopped

  • 1/2 cucumber diced

  • 1 shallot diced

  • 1 lemon juiced

  • 1/4 cup olive oil + more for serving

  • 1 cup arugula

  • Hummus

  • Cauliflower rice

  • Salt and pepper

Instructions:

  • Heat the oven to 400. Mix the chicken, harissa, flour, egg, dill, garlic, onion, salt and pepper in a bowl. Divide into meatballs on a baking sheet (12-14) and bake for 20 minutes.

  • Mix the cucumber, shallot, arugula, lemon, and olive oil in a bowl. Season with salt and pepper. To serve add a nice swipe of hummus, cauliflower rice, salad, and meatballs. Top with feta, olive oil, dill, and more lemon. Enjoy!
