Detox Chicken Soup
During the holidays I try not to worry so much about everything I’m eating. Sometimes I find myself in situations where there is no healthy option. So I let go of control and enjoy the moment. That being said, when those moments pass I make sure I’m eating a nutritious meal to ground and recenter myself. One of my favorite ways to do that is my Detox Chicken Soup.
This soup is packed with veggies, vitamin c, protein, healthy fat, and tons of minerals. Chicken soup is truly healing both for the body from all the vitamins + minerals from the broth and the soul bc it’s made with love.
Here’s how you make it.
Ingredients:
6 cups chicken broth
2 cups water
2 chicken breasts
1 onion diced
3 carrots chopped
3 stalks celery chopped
3 gloves garlic minced
1 in ginger grated + 1 in to throw in
2-3 tbsp olive oil
2 lemons juiced
Parsley chopped
Dill chopped
Kale chopped
Salt and pepper
Cayenne
Turmeric
Kelp noodles
Instructions:
Heat 2 tbsp of olive oil in a large pot and add the onion, celery, and carrot. Sauté for about 5 mins then add the garlic and ginger for another min. Push to the side and sear the chicken for 3 mins on each side. Add more oil if needed. Season with all seasonings, add the broth, water, dill, parsley, noodles, and ginger piece. Bring to a boil and let simmer for 25 minutes.
Remove the chicken to shred and return to the pot. Add the lemon and kale and stir until wilted. Season to taste and enjoy!
