Dairy Free Cauliflower Nachos

I looove getting inspo from my fav dishes at restaurants and after a recent trip to Petty Cash I knew I needed to make this. My recreation is dairy free - I used @kitehillfoods sour cream for the roasted pepper crema + @miyokoscreamery pepper jack cheese. My issue with df cheese is that it doesn’t bubble, and while this didn’t it was still very creamy. 10/10 for me!

Serve this with chips, tortillas, or just eat right out of the pan. Don’t sleep on it!

Here’s how you make it.

Ingredients:

  • 2 heads cauliflower chopped into florets (use two colors!)

  • 3 stems kale torn

  • 2 tablespoons avocado oil

  • 1 teaspoon garlic powder

  • 1 teaspoon cayenne

  • 3 poblano peppers or anything similar

  • 3 cloves garlic

  • 1 lime juiced

  • 1 lb ground beef

  • 1 @sietefoods taco seasoning

  • 1 @miyokoscreamery jack cheese

  • 1/2 cup @kitehillfoods sour cream

  • Salt and pepper

Instructions:

  • Broil the peppers for 12 minutes each side. Remove the skin and blend with the sour cream, lime juice, garlic, and salt. Set aside.

  • Heat the oven to 425. On two separate sheets toss the cauliflower and kale with the avo oil. Season the cauliflower with the garlic and cayenne. Salt and pepper on both. Bake the cauliflower for 20-25 minutes and the kale for 12 or until crispy.

  • Heat a pan on medium and brown the ground beef. Drain the fat and cook with taco seasoning according to the instructions.

  • Assemble the nachos by mixing the beef with the cauliflower, then top with the cheese. Broil for 3-5 minutes. Top with the crema and kale. Enjoy!
