Cauliflower Tabbouleh with Fried Halloumi
Spring is here, so it’s time to start eating like it! I love this dish from @thebeautychef bc it’s full of fresh flavors, very light, and still super satisfying. It also requires little to no cooking, so that’s a plus! Simply chop all the ingredients and mix in a bowl. The beautiful colors of red, green, white, and purple make it exciting to eat! You can easily skip the halloumi and sub a different protein, or add chickpeas. It’s perfect for lunch or dinner!
Here’s how you make it.
Ingredients:
16 oz cauliflower rice (blended down to quinoa size pieces if needed)
6 oz halloumi cut into small pieces
1/3 cup cherry tomatoes sliced
1/3 cup cucumber diced
1/2 red onion diced
1/4 cup olive oil or as needed
3 cloves garlic minced
2 lemons juiced
1 large handful mint roughly chopped
1 large handful flat parsley roughly chopped
Salt & pepper
Instructions:
In a large bowl mix together the cauliflower, tomatoes, cucumber, onion, and garlic. Toss with the lemon and olive oil and season with salt and pepper.
Heat a nonstick pan over medium and fry the halloumi for 1-2 mins each side or until brown. Serve warm over the tabbouli and enjoy!
