Cauliflower Crust Pizza Salad

I am a huge fan of enjoying a weeknight pizza - but it’s gotta be cauliflower crust for me! I love to make these because it’s so easy to throw together, and you can do so many different topping combinations.

This pizza had more of a salad vibe with the heirloom tomato, goat cheese, red onion, & arugula. I used pesto as my sauce to pack in even more greens and it was seriously fresh af.

Here’s how you make it.

Ingredients:

  • 2 cups basil

  • 4 tablespoons nutritional yeast

  • 3 tablespoons sunflower seeds

  • 4 cloves garlic

  • 4 tablespoons olive oil

  • 4 tablespoons water

  • 1 lemon juiced

  • Salt

  • Cauliflower crust of choice

  • 1 heirloom tomato

  • 1/2 red onion sliced thin

  • 2 handfuls arugula

  • Goat cheese

Instructions:

  • Make the pesto by blending the basil, nutritional yeast, sunflower seeds, garlic, water, salt, 1/2 the lemon juice, and 4 tablespoons olive oil. Add more water as needed.

  • Add the arugula to a bowl with the remaining lemon juice and oil. Follow instructions for cauliflower crust prep. And top with the pesto, tomato, onion, and goat cheese. Return the pizza to the oven for 4 minutes. Top with arugula and enjoy!
