Brussels Sprouts & Cauli Gnocchi
Brussels sprouts used to be seen as a gross vegetable, but I honestly think it’s because they weren’t used correctly. This dish combines the sprouts with the cult classic Cauliflower Gnocchi from Trader Joe’s, and it’s a match made in heaven. Topped with a buttery sauce, this is the perfect dish for when you want something yummy with a side of health. It would also be great with the addition of bacon or sausage!
Here’s how you make it.
Ingredients:
Brussels sprouts cut up - I used a full bag from TJ’s
Cauliflower gnocchi or any low carb gnocchi
3-4 tablespoons butter
3 tablespoons olive oil
Red pepper flakes to taste
Drizzle of honey
Salt & pepper to taste
Fresh sage leaves - optional
Instructions:
Heat 2 tablespoons of the oil on medium high heat, and add the Brussels cut side down. Let sit for close to 5 mins until they are brown on the bottom. Stir to cook for a few more minutes and add salt, pepper, & the red pepper flakes. Transfer to a bowl.
Heat the remaining oil, and add in the cauliflower gnocchi. Let them sit covered for 4-5 mins (shorter if not frozen). Add the butter, honey, sage, salt, & pepper and continue to cook/stir for a few more minutes. Add in the Brussels back in and stir to combine. Top with Parmesan & enjoy!
