Beef Teriyaki Lettuce Wraps

These teriyaki beef lettuce cups took less than 15 minutes to make and were pretty delish. You could easily swap for ground chicken, but the beef was a nice change! I always buy Belcampo Meat when possible because their meat is sustainably sourced - this is better for you and the planet! Pair with my fav teriyaki sauce from Primal Kitchen for the perfect low sugar, low carb meal!

Here’s how you make it. 

Ingredients:

  • 1 lb ground beef

  • 1/2 onion diced

  • 1 in ginger grated

  • 3 cloves garlic minced

  • 1/4 cup teriyaki sauce

  • 1 tablespoon olive oil

  • 1 can water chestnuts chopped

  • Lettuce of choice

  • Cauliflower rice

  • Green onion

Instructions:

  • Heat a large nonstick pan over medium and use the oil as needed. Cook the onion for 3 minutes then add the ground beef. Break up using your spoon and cook til no longer pink.

  • Add the ginger and garlic and cook for another minute. Add the teriyaki sauce and water chestnuts and stir. Bring to a boil and let simmer until the sauce is thick to your desire. Serve on the lettuce cups with cauliflower rice and enjoy!
